Bagel bliss, high tea, and yarn!

There is something wonderful about mastering a skill and getting repeatable results. I’ve been on a bagel quest for the last couple of months, turning out batch after batch in search of the perfect multi-grain boiled bagel texture.

I did a lot of reading, experimented with a couple recipes, and ended up with a heavily modified version of this Easy New York-Style Bagel recipe from the Oregonian. Here’s my take.

Bagels

Ingredients
1 1/4 cups warm water, divided into 1/2 cup and 3/4 cup
(you may need up to 1/4 cup more)
1 1/2 tablespoons granulated sugar
2 1/2 teaspoons active dry yeast
2 cups bread flour
1 1/2 cups whole grain flour; I’ve tried spelt, and now kamut
Extra bread flour for kneading
2 1/4 teaspoons salt
Optional toppings: coarse salt, poppy seeds, or sesame seeds

Instructions
In an 8 ounce measuring cup, add 1/2 cup warm water. Pour in the sugar and yeast, stir to combine. Let it sit for 5 minutes to get the yeast going.

In a large bowl, mix the flours and salt. Make a well in the middle and pour in the yeast-sugar mixture. Add an additional 3/4 cup warm water into the well. Mix and stir in the rest of the water as needed to form a moist, firm dough. You may need to add more water to get this texture.

On a well-floured countertop, knead the dough for 5 minutes, working in additional flour as needed. Your finished dough should be firm and stiff. (Other recipes have you knead for 10 minutes, but this is too much time for whole grain flours.)

Brush a large bowl with olive oil. Add dough and turn it so that it is coated with the oil. Cover the bowl with a damp kitchen towel and let rise in a warm place for 1 hour. A perfect warm place is your microwave! Before putting the bowl of dough in, heat a large mug of water for 3 minutes. Move the mug to the back corner, add your covered bowl. When the dough has doubled in size (about an hour), punch the dough down and let it rest, covered with the towel, for another 10 minutes.

Divide the dough into 9 equal pieces. Form your bagels by gently rolling each piece into a ball, flatten a bit and poke your thumb through the middle and make a good sized hole. (The hole will shrink.) Place bagels on a lightly oiled baking sheet, or an unoiled Silpat. Cover the bagels with the damp towel and let them rest for 10 minutes.

While the bagels are resting, bring a large pot of water to a boil and preheat the oven to 425 degrees. Reduce the heat to a low boil. Working in batches of 4 or 5 bagels, use a slotted spoon to lower the bagels into the water. Simmer for 2 minutes, flip, simmer for 2 more minutes. Remove the bagels to a wire rack to drain.

Add toppings while bagels are damp, just out of the pot, if desired.

Return drained bagels to baking sheet. Bake for 20 minutes, until golden brown. Cool on a wire rack.

Yield: 9 lovely bagels

It’s been a food heavy weekend. Carole and I put on a tea for a lovely group of graduates.

Besides scones, we had savories

and sweets.

The moms served the scone and savory courses, and then we had them sit so we could serve the sweet course, and serve the moms the whole tea menu plus mimosas.

Biscuit and I are testing out ideas for this lovely yarn from Bumblebirch. I think I know what it’s going to be. Biscuit is still dreaming.

Knitters’ tea party, prize winners

Tea and knitting, a winning combination. When a table is set with yarn as part of each place setting, you know it’s going to be good. (Yarn is from my stash, which needed thinning. Everybody wins!)

My buddy Carole and I put on a knitters’ tea for a friend’s fund raiser in Salem on Sunday. I brought a small trunk show with me so knitters could touch and feel and try things on. I forgot to take a picture, sorry.

Our teas were from Plum Deluxe: Andy Hayes is an online tea blender and purveyor based here in Portland. Our two teas were Afternoon “High Tea” Tea, a lightly caffeinated tea with notes of peach and pear, and Everything is OK Herbal Tea. They were both delicious. The teas arrived in this signature purple packaging, which smelled wonderful! I kept sniffing it. Andy also provided us with a goody bag of 2 teas as a door prize. And his postcards made our table that much prettier; you can see them in front of the yarns in the table picture above. Thank you Andy!

As always, we began with scones, butter, clotted cream, and jam. The jams are from my kitchen; we had yellow plum bourbon, red plum with Krupnik (a spiced honey liqueur), and strawberry balsamic. Again, I forgot to take a picture, but I was busy!

English trifle in mini wine glasses. I love these little glasses, we use them for lots of desserts. Carole and I each have a set, so we have 24 readily available. And she gave some to her other friends, too, so we have at least 48 if we need them! That’s smart gifting…

Upcoming classes, and catching up the blog

It’s been super busy here since I came home from Port Ludlow, Edmonds, Ellensburg. I feel like there’s a mega-post about that road trip that needs to happen, but I haven’t had a chance to process it yet. So I’m going to jump ahead and let you know what’s going on now, and then work backwards. We’ll pretend it’s ballroom dancing or something…

May is shaping up to be a busy month. I’m doing a workshop for the Tigard Knitting Guild on May 9. We’re going to play with mosaic slipped stitch knitting. In the morning we’ll learn how it works, and in the afternoon we’ll design something with it! This is such a great way to play with color, but we only use one color per row. No carrying, no floats.

On May 16, I’ll be down in Salem teaching at Tangled Purls. I’m teaching two classes. The first is Blocking: It’s Magic from 10 to noon.

I’ll also have my trunk show there all day! We’ll have a meet and greet between classes, so come take a class or just say hello.

I’ve been knitting like mad this month. I’m working with Knitted Wit’s new Targhee Shimmer yarn, 80/20 Targhee/silk in DK and worsted weights. The wool is sourced 100% sheep to skein in the USA. I designed a Criss Cross Cowl in Kiss and Teal (to go with the Criss Cross mitts and hat and beret) with the worsted, pattern coming soon. This color is amazing, but it doesn’t photograph well. In real life, it’s a very rich aquamarine, like a deep blue-green emerald.

I knit a pair of Pointer Mitts with the DK, in Liberally Bleeding Heart.

These are going to TNNA, the The National Needlearts Association trade show at the end of May. There will also be a Pointer cap to go with the mitts, but a sample knitter is doing that one for me. And a Sophie’s Rose Shawlette in Knitted Wit’s Single Fingering, in Enchanted Forest and Salted Caramel which I’m not knitting, but I’ll block it. Thank goodness for sample knitters!

I’ve also been diligently knitting on my Tilt Shift KAL project. Two skeins down, one left to go. This is very relaxing knitting for me, because it’s 80% stockinette. I’ve been reading a lot of blogs and watching TV with it. The KAL has been going on all month, and should be wrapping up this week.

I don’t know that I’ll have mine done by then, because I have a design project to finish before TNNA which is higher priority because it has a deadline. Click, click, click…

I also blocked my Fern Shawlette that I knit for my previous KAL. Finally! You’ll note that I’m artfully hiding the ends I have yet to sew in.

In my spare time (ha!) my friends Carole, Suzanne, and I put on a tea for 60 on Saturday. Planning, shopping, cooking, plating, serving. And no pictures of the event; I was too busy kitchen wenching. But Sue from Tango Mango came and did a presentation with her collection of vintage purses, which was very cool. Here are just a few.

I’ll do a report on the Strung Along Retreat soon. It was great. But I have to wash and block my little swatches from Clara Parkes’ class before I can blog it!
